
My name is Althea and I'm a mother and grandmother in sunny Californina. But I was born and raised in New York, NY "The Big Apple". My father was born in south Carolina and my mother from florida by way of Nassau. so I am sure anyone who knows soulfood knows how good the food was in my house. There was plenty of greens, beans and rice flavored with hamhocks, salt pork, fatback,smoked neckbones, and hambones. when my father and other elders of my family became ill with high blood pressure and having heart attacks doctors recommendend a no pork diet. my father began seasoning alot of his fresh veggies with fresh chicken, mostly backs and necks. what a great flavor chicken turned out to be for our veggies. I like to cook and even more I love to see people enjoying what I cook. I'm still finding new ways to cook health conciously. I learn as I go. food is very good for us, just eating right can prevent illness and prolong the life of our bodies.
I'm goin to share a recipie that is easy and delicious. now, Im no scholar of any kind. Im just a mom, and I can cook. I find it to be incredible that with this blog I can Love Eat, and Share with the world. Let's pray that what I have to say can help someone, somewhere. Chicken & Cabbage
1 medium cabbage head1 small onion
2 chicken backs & necks
3 cloves of fresh garlic(chopped)
salt & pepper to taste
In a deep fry pan place your seasoned chicken backs and 1/2 onion diced let simmer on a low fire and a tight cover for 12 minutes. While you wait you can cut your cabbage up to desired peices. when you return to the pan you will notice
the natural juices the low heat pulled from the chicken and onion. Turn chicken and let it simmer just 2 or 3 minutes covered. Then remove the chicken from the pan and placenearby in a plate.Put cut clean cabbage and the other half of onion chopped in pan and stir all the liquid in the pan up an into the cabbage and onion. season to taste. cover and let simmer for 15 minutes stir only once.
